Cinnamon Donuts

It is Friday tomorrow!! Any plans for the weekend? We have family visiting from Sydney and I think I am going to make these donuts for them. Who would have thought you could eat donuts on a starch/gluten-free style of eating. There was no deep-frying used here so the outside was not crispy like the donut shop kind…I wonder how that would go? Deep fried in coconut oil. Hmmm.

Cinnamon Donuts
- 1 1/4 cup (180g) almond flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1 tsp nutmeg
- 1/2 tsp cinnamon
- 20g rapadura sugar
- ½ tsp cinnamon
- 3 eggs
- 1/4 cup ghee or oil, melted
- 2 TBS honey
- 2 medjool dates
- 15g pure maple syrup
- 1 vanilla bean, seeds scraped and pod discarded (or 1/2 tsp pure vanilla extract)
- Preheat oven 180C.
- Mix the dry together.
- Mix the wet together.
- Mix all together in a food processor/Thermomix until smooth.
- Put in donuts or muffin trays and place in oven.
- Cook for 10 mins or until cooked through.
- Definitely do not overbake otherwise they will be dry!
Topping:
- 8 medjool dates, pitted
- 1 1/2 Tbs cinnamon
- 2 Tbs ghee/butter
- 1/4 cup shredded coconut
- Mix all the topping ingredients together in the food processor/Thermomix.
- Spread onto cooled donuts and sprinkle with shredded coconut.
