Cinnamon Donuts

It is Friday tomorrow!! Any plans for the weekend? We have family visiting from Sydney and I think I am going to make these donuts for them. Who would have thought you could eat donuts on a starch/gluten-free style of eating. There was no deep-frying used here so the outside was not crispy like the donut shop kind…I wonder how that would go? Deep fried in coconut oil. Hmmm.

Cinnamon Donuts

  • 1 1/4 cup (180g) almond flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1 tsp nutmeg
  • 1/2 tsp cinnamon
  • 20g rapadura sugar
  • ½ tsp cinnamon
  • 3 eggs
  • 1/4 cup ghee or oil, melted
  • 2 TBS honey
  • 2 medjool dates
  • 15g pure maple syrup
  • 1 vanilla bean, seeds scraped and pod discarded (or 1/2 tsp pure vanilla extract)
  1. Preheat oven 180C.
  2. Mix the dry together.
  3. Mix the wet together.
  4. Mix all together in a food processor/Thermomix until smooth.
  5. Put in donuts or muffin trays and place in oven.
  6. Cook for 10 mins or until cooked through.
  7. Definitely do not overbake otherwise they will be dry!

Topping:

  • 8 medjool dates, pitted
  • 1 1/2 Tbs cinnamon
  • 2 Tbs ghee/butter
  • 1/4 cup shredded coconut
  1. Mix all the topping ingredients together in the food processor/Thermomix.
  2. Spread onto cooled donuts and sprinkle with shredded coconut.
