Chocolate Chip Cookies

It is cold, rainy and getting late in this household. I am in the mood for chocolate that is warm to eat but not in a liquid form. Hot chocolate is awesome, but sometimes it just doesn’t cut it. I am catching up on some more Block episodes while planning for work tomorrow so hanging out in the kitchen cooking something elaborate is not going to happen. So these Chocolate Chip Cookies were born! I’m so proud

Chocolate Chip Cookies
- 125g melted butter
- 2 tsp vanilla extract
- 30g rapadura sugar (or any sugar)
- 170g honey
- 2 eggs (you can whisk them before hand if you can be bothered)
- 170g almond flour
- 30 g coconut flour
- 30g desiccated coconut
- 1 tsp salt
- 1 tsp baking soda
- dark chocolate chips (I used an Old Gold Original Dark Chocolate block chopped up for this one).
I do things the quick and easy way when it comes to cooking. None of this whisking the wet ingredients and then slowly folding in the dry ingredients (although I know that is required for some recipes).
For this one I threw all the ingredients into my Thermomix (you can use your food processor if you don’t have a TM…yet) and mixed it up like da’ boss! I then placed dollops of the dough onto a baking tray covered in baking paper and put it in the oven for around 20 minutes on 170C (fan-forced). It makes 23 man-sized cookies.
It really was that easy.
The cookies will harden up as they cool down, so don’t over cook. The cookies just need to go a nice cookie-brown colour and plopped onto a cooling rack.
I better stop typing this and get into those cookies…they are disappearing fast!

I am making these first thing in the morning! I attempted Grain Free muffins yesterday and they were terrible!!! Roman asked me for choc chip cookies today, so he will be pleased with these!!!

They passed the Mama test as a great alternative to traditional choc chip cookies and they passed the 4 year old test. YUM! I only got 8 cookies though….mine are more giant man size. I also have no way to weigh ingredients so I was just kinda guessing amounts for everything, maybe that affected the end amount??
Seriously. What are you trying to do to me as I munch down on my chicken with onions and spinach?! Love you (despite the torture!)
