Emergency Choc Fudge

I was sitting on the couch watching a movie wishing that I had some chocolate to nibble on. I haven’t had any real desire for chocolate for a long time, but I really wanted chocolate tonight.
In the past, I would have begged Kirk to drive to the servo and pick some up. Freddo Frog, Cadbury Milk Chocolate, or a Crunchie! Problem is, I now know what is in that stuff and there is no way I am shoving that in my gob anytime soon. There is also no healthy alternative after 8:30pm, so I had to drag my brain powers away from the chocolate-consumed-state that I was in and do some problem solving. I had to think of another way to fix my craving, hence it was an ‘emergency’. Any chocolate craving is an emergency. We all know that!
I gave a bowl to Kirk and he kept saying, “beautiful”, “what’s in this again?”, “beautiful”. Glad he approves…he is pretty fussy. It is a lovely sticky texture too.
Emergency Choc Fudge
These measurements are going to be a little bit of a guess as I just threw things into the Thermomix and adjusted it depending on taste. Of course, you can leave out and add in all sorts of ingredients, so have fun with it!
- 1 cup cacao powder
- 2 Tbs agave nectar
- 2 Tbs mesquite powder
- 1/2 cup desiccated coconut
- pinch of salt
- 2 Tbs almond nut butter
- 1 Tbs xylitol
- 1/2 Tbs coconut oil
- Place all the ingredients into the Thermomix or food processor. It doesn’t matter which one you use, you just need it to mix.
- Taste it and add more sweetness using agave or xylitol if needed.
- If the mixture is too runny, you can add more coconut or cacao powder.
This emergency fudge did the job and I was able to concentrate on the movie again. Phew – emergency diverted.
