Egg & Tuna Patties

One of the difficulties I am finding with having to go starch-free and milk-free, is finding food that we can shove into our mouths quickly (and apparently taking good photos at night from your iPhone – soz about that). Finding food for when we are after a snack and, boom, there is something already made and waiting for our tummies. I am so used to having pre-making foods waiting and being very organised with our meals, but I have struggled a little bit with finding recipes that hit the criteria for this. I can’t believe how many foods that have starch in them….hidden starch. A type of apple, some quinoa, certain yogurts, beautiful bananas, rice flours, beans, cashews, almonds with their skins on! I used to use these all the time in my cooking and now Kirk has to avoid them. I’m feeling major pressure to come up with alternatives!
I am learning that this change is going to take time and I can’t be too hard on myself. We don’t need an incredible starch-free chocolate mud cake right now (who am I kidding….of course we do!!).
One recipe I have enjoyed making and gobbling up are these Egg & Tuna Patties. Quick, easy, effortless, quick. We get plenty of eggs from our chooks, and there is always a tin of tuna in the cupboard (tested for starch and thankfully none…in this brand anyway).
Egg & Tuna Patties
- 2-3 eggs
- 1 small tin of tuna in olive oil
- pinch of salt and pepper
- 1 spring onion
- *optional: cayenne pepper, minced raw mushrooms
- Combine all the ingredients in a bowl
- Heat a pan with oil or ghee
- Pour mixture onto hot pan in patty shapes
- Cook one side and flip over to cook the other
- Serve with a lovely, fresh salad!

Raw Macaroons are my go to snack for a quick burst of energy! You can freeze them or dehydrate them. Add some raw cacao chips & some peppermint oil, and oh-my-goodness watch out because cookie monsters will start coming out of the woodwork! Starch Free!

These look awesome! Thank you. Coconut goodness
Here is my other favorite go-to raw, starch free, sweet treat that is full of good energy! The Raw Brownie! These are so dense and rich, that even my non-raw, junk food eating friends & family LOVE these! You can also add in mint oil, chopped nuts, etc. Starch Free! These are so quick & easy to make – and freeze well too.

Aaah yes! I remember seeing these a while ago and never made them. Thanks for passing it on and it is great to get a first-hand recommendation from someone who has made them before
I’ll have to check on the walnuts, but I am pretty sure they will past the starch test. xo
I read somewhere that a tiny bit of the walnut skin may contain starch – but I I soak all my nuts for 8 hours, rinse, then dehydrate to start the sprouting process. (I think keep them bagged up in the freezer) I have a bottle of iodine for which I test EVERYTHING and my walnuts passed the test – though it’s always best to try for yourself! Macadamia nuts or skinless almonds can work too. I highly recommend soaking the walnuts for at least 15 – 30 minutes before using to help reduce the bitterness found in the outer coating.
I use raw cacao powder in my kitchen, but I also bought Ghirardelli cocoa powder as I saw another AS’er Blogger using it since it passed as starch free. Not all chocolates are created equal ♥
Hi, I have also made the raw brownies mentioned above….A-mazing!! Another great blog I have found recently is called urbanposer.blogspot.com.au . She has some amazing recipes that may be suited for people with AS.
I am thinking that these patties might also be good for the toddler in our house. He is a wee bit of a fussy eater, has digestive problems (thanks to traumatic birth and breastfeeding issues) and pretty much eats around the veges. Will give it a go and see what he thinks.
Thanks

Thanks Betty Rawker re:walnuts! I will soak them for sure then.
Great to get your message Julie about passing these Egg & Tuna Patties passing the fussy toddler test
I will head over to the blog you have suggested and grab some recipes. Thanks for passing that on! xo
