Chocolate Almond Balls

I made these for the first time last night and the recipe went straight into my ‘favourites cookbook’. Even my husband liked them…and he is not into dates at all!
I used my Thermomix to whizz the ingredients up, but you can use a food processor just as easy.
Chocolate Almond Balls
- 60g almonds
- 50g sunflower seeds
- 70g sultanas
- 60g roasted cashews
- 120g pitted dates
- 1 tsp vanilla extract
- 2 tbs cocoa powder
- desiccated coconut
*blend all the ingredients (other than the coconut) in the Thermomix bowl and blend for 70 secs/sp9. Roll into balls using your palms and then coat with the coconut.
*Place finished balls in a sealed container in the fridge to firm up.
Remember, if using dates in cooking, they should be firm on the outside and nice and moist on the inside. I like using medjool dates, but sometimes they can be expensive so I just soak the regular dates in a bowl of room temperature water for a few hours or overnight. This will get them nice and juicy!
