Cashew & Honey Bars

These little bars are quite addictive and perfect for when you have a sweet tooth, but want to stay in the health zone. I usually make a double batch of this, cut it all up into squares, put in a sealed container and place in the fridge. Perfect to grab for lunches or bring on a pretty plate to a party. Trust me, they will be popular!
This a recipe that I have slightly adapted from Cyndi O’Meara.
- 1 cup chopped cashews
- 1 cup desiccated coconut
- 1 cup sunflower seeds
- 1 cup sesame seeds
- 1/4 cup black chia seeds
- 1 cup organic rolled oats
- 1/2 cup rapadura
- 125g melted butter
- 1/4 cup fresh raw honey
*Preheat oven to 180C (160C if fan-forced)
*Mix cashews, coconut, seeds, oats and sugar together
*Spread mixture on a large baking tray and bake for 15 minutes (stirring every 5 minutes) until browned
*In a small saucepan melt butter and mix in honey
*Add to toasted ingredients, mix well
*Press firmly into a square tray
*Cool, slice into bars and store in an airtight container in the fridge
